Hot Guys Who Cook: TJ Loden

For those of you who have a fantasy or two regarding a pottery wheel and a hottie (thanks to the movie Ghost), we bring you TJ. He's a Michigan transplant living in Los Angeles who is making his living as a potter. TJ loves his wheel but says he likes to romance the ladies with his food, his smile and his killer moves on the dancefloor—this boy can tango! But don't think you can sum TJ up by his love of art and dance: he manages yang his yin with beer, buddies, and football.  He was inspred to create his recipe after tasting a similar dish at a café in California.

Paradiso Poach
2 cups water
2 eggs
1 medium (heirloom) tomato
3-5 sweet basil leaves
1 slice of bread
1-2 ounces balsamic vinegar
Salt and pepper, to taste
Optional:
1/4 avocado
1-2 ounces buffalo mozzarella

Set water on stove to boil. Rinse the basil leaves and pat dry; slice tomato and season with salt and pepper. Slice the avocado and mozzarella; toast the slice of bread. Reduce water from boil to simmer, then gently crack the eggs into the water, being careful not to break the yolks. The eggs take about 4 minutes to cook to a nice runny or rare center.

Plate the toast next the mozzarella for a nice base. Slice the tomato and arrange on the plate, tear the basil leaves into pieces over the dish, place the avocado on the side, and finally remove the eggs with a colander spoon, allowing the excess water to drain off. Carefully slide eggs into place atop the layers of fresh flavor, finish with a drizzle of balsamic vinegar and freshly cracked pepper.

Mark is a fireman with a shoe fetish and a healthy love for fine wines. We're not sure what he'd pair his recipe for baby back ribs with—red, or white? In addition to his more refined tastes, Mark loves barbecue. His favorite thing to eat when catching a football game on TV is anything drenched in a delicious barbecue sauce. He cooks for his crew at the fire house, and this dish is their favorite!

Baby Back Ribs
3 racks of ribs
2 cups brown sugar
2 tablespoon steak seasoning
2 tablespoon lawry’s seasoning salt
2 tablespoon cumin
2 tablespoon garlic salt
Sauce:
1 large bottle bullseye BBQ sauce
1 small bottle bullseye BBQ sauce
2 cups brown sugar
1 bunch of cilantro
4 large jalapeños
2 roasted gold bell peppers
1/4 cup shredded ginger
1 cup cabernet sauvignon
1/4 cup balsamic vinegar


RIBS
Combine seasoning and run the ribs generously; let sit 10 minutes. Over high heat, sear ribs until golden brown and crispy. Remove from grill, cover and slow roast for three hours at 250 degrees or until meat almost falls from bone.
SAUCE
Combine small bottle of barbeque sauce and all chopped ingredients into blender and blend until smooth, adding balsamic vinegar as needed to smooth blend. Heat large bottle of barbeque sauce, then add brown sugar, wine into pot and simmer for 45 min on super low heat. Remove ribs from oven, cut individually and dip in sauce. Serve with extra sauce.

Besides the kind of cute tick of talking about himself in the third person, Mark has other ways of setting himself apart from the crowd. Example: pairing up likely lawyer garb with a face piercing and some tattoos for an unlikely legal style. But in the kitchen he likes to kick it old school with a traditional Filipino dish. Mark learned to cook it by visiting with just about every female member of his family until he got it right. "Virtually every domesticated Filipina woman knows to cook this dish," he says. Let's hope this undomesticated Filipino man knows what he's doing!

Chicken Adobo
1/2 chicken (several chicken breasts will suffice)
Cooking oil of choice
2-3 garlic cloves
1/4 cup soy sauce
1 can chicken broth
1 teaspoon sugar
Pepper, to taste
2 bay leaves

Add a few splashes of oil to a pan, put on medium/medium high heat. Crush garlic cloves and add to pan. Add in the chicken; let it cook on both sides for a few minutes. Add soy sauce, chicken broth, sugar, a few dashes of pepper and two bay leaves. Let sauce reduce on medium heat; the chicken will cook through as the reduction occurs.

    2. The "Chicken Adobo" to me is the most practical, simple, uncomplicated, delicious, nutritional and quick dish to prepare, especially after a hard day's work. Spices can easily be tailored to your taste without sacrificing your budget. Oh yeah, since we always have chicken in our fridge this dish is a true lifesaver for unexpected company without using too much of your time and running around chasing your... oh well, get the drift..

    13. I've always wondered how to cook a yummy traditional Filipino dish. Thanks for sharing, Mark. As for who is the hottest? Well, I enjoy serious exotic spice in all parts of my life. It appears that you have a good head on your shoulders and good taste in your skillet. You could fill the bill as THE hottie for oodles of chicks who visit MyStyle. Now, for a serious question: what do you serve with the chicken adobo?

    18. HOT is not the right word for these guys. This show is fun but HOT is for men that would make you want some now and this is not HOT. I hate that HOT is so over used now so everyone thinks they are HOT. I guess beauty is really in the eye of the beholder so then maybe some fat chick would think they are HOT.
